A refreshing cold vegetable soup.

Ingredients for 6 servings

  • 300g fresh tomatos
  • 1-2 cans peeled tomatos
  • ½ – 1 cucumber
  • 1 large pepper
  • 2 cloves of garlic
  • ½ fresh chillipepper
  • 1 large onion
  • Salt and pepper
  • Olive oil
  • Fresh coriander


  1. Chop the tomatos and the cocumber into large pieces. Clean and chop the peppers into large pieces. Skin the garlic. Chop the garlic and chillipepper fine.
  2. Peel and cut the onion into thick slices.
    Heat 1-2tbs olive oil and fry the onions until clear (glassy). Add half of the fresh tomatos and sweat. Remove from heat.
  3. Slowly add the rest of the fresh tomatos, the canned tomatos, ghurkin, pepper, garlic and chillpepper.
    Puree, add salt and pepper to taste and refine with a little olive oil.
  4. Chill for at least two hours before serving.
    Garnish the soup with finely freshly chopped corainder.
